Kombucha is a refreshing, fermented sparkling tea drink that naturally contains a small amount of alcohol. However, if the drink is allowed to continue to ferment then it will become alcoholic (as much as 1.5% ABV).
Hard Kombucha Is one of the fastest growing segments in alcoholic beverages in the United States, but is not yet common in the UK. Previous brands selling a “hard“ kombucha in the UK did so by adding a white spirit (typically vodka) to their kombucha drink - unsurprisingly, these drinks tasted terrible. We, at Nunc, are producing the UK’s first twice fermented alcoholic kombucha, and whilst in USA some of their hard kombucha’s are as high as 8% ABV, we are brewing ours to a lighter 2.5% ABV. TWICE FERMENTED ALCOHOLIC KOMBUCHA
WHAT IS HARD KOMBUCHA?
Simply put, hard kombucha is alcoholic kombucha, or kombucha with alcohol greater than 0.5% ABV.
Why is it called hard kombucha? In the USA (and UK) they have “soft” drinks, which they use for non-alcoholic drinks, and when referring to alcoholic drinks they use the opposite to soft - “hard”. So alcoholic kombucha becomes hard kombucha. We don’t like the term hard kombucha, so we call our drinks lighter alcoholic kombucha.

BREWED NEVER BLENDED
At nunc, we’re devoted to the art of authentic brewing. Every batch is a testament to our exacting approach, ensuring the integrity of our process mirrors the purity of our ingredients. We never use artificial and natural flavourings, extracts, and chemicals. For us, patience isn’t just a virtue; it’s our brewing philosophy.
For our alcoholic range, we embrace a unique, twice-fermented method that perfectly encapsulates the essence of nunc. Other brands will take the easy way and blend their drinks with spirits, we choose to let nature run its course. It takes much longer, but the final result is worth it.
